Roasted Broccolini with White Bean Sauce

Ingredients

Broccolini:

  • 1 bunch broccolini or broccoli

  • 3 Tablespoons of high-heat oil (we like avocado oil)

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon oregano

  • salt and pepper

  • shredded parmesan cheese

Sauce:

  • 1 cup cooked or canned white beans

  • 1 garlic clove

  • 1 teaspoon mustard

  • 1 Tablespoon oil (we like olive oil)

  • juice of half a lemon

  • salt and pepper

Directions

  1. Preheat the oven to 425 degrees and line a baking tray with parchment paper.

  2. Using a knife, slice off the end of the stems of thicker stalks.

  3. Cut large stalks in half lengthwise so that they are all about the same size.

  4. In a bowl, mix high-heat oil, smoked paprika, garlic powder and oregano.

  5. Arrange broccolini on the baking tray and brush with the oil and spice mixture.

  6. Roast in the oven for 10 to 15 minutes

  7. While it’s cooking, make the sauce. Place all sauce ingredients into a blender/food processor or mix well in a bowl, until the mixture becomes creamy and smooth. If the sauce is too thick, add water mixing in a Tablespoon at a time.

  8. Remove from oven once broccolini has soft stems and crispy ends. Drizzle sauce on top or dip. Serve as a side dish with any meal!
