Simple Mushroom Sandwich

Ingredients:
1 pound mushrooms (we like oyster, chestnut, or shiitake)
1 Tablespoons butter or oil
¼ onion (any type)
1 clove garlic
2 slices bread
parmesan cheese
mayo
mustard
lettuce, arugula, or microgreens (optional)
Directions:
Smash garlic clove, remove skin, then finely chop.
Remove skin from onion, then finely chop.
Lightly rinse mushrooms or wipe with a wet paper towel, then chop mushrooms in slices.
Warm a pan on medium heat, add butter/oil in the pan and cook garlic and onion for 5 minutes.
Add sliced mushrooms and cook until water from the mushrooms is gone from the pan and they’re slightly crispy, then remove from pan.
Grab 2 pieces of bread, spread mayo and mustard on both sides of bread.
Construct sandwich by adding in mushroom mixture, cheese, then place back in pan, cook on both sides, flipping until cheese is melted and crispy.
Add greens on top if using and enjoy!
